WP1. New concepts for improving the functionality of biologically active compounds

The scientific objectives of this WP are:

Task 1: Testing the affinity of selected whey proteins for carotenoids and anthocyaninsusing in silico techniques

Task 2: Obtaining and advanced characterization of sea buckthorn and sour cherry extracts.

WP2. Composites with high functionality

The objectives of this WP involves the evaluation and correlation of conformational stability of whey proteins in terms of improving their ability to bind carotenods and anthocyanins. The scientific objectives of this WP are:

Task 3. Obtaining the proteins-anthocyanins and proteins-carotenoidcomposites.

Task 4. Evaluation of the composites functionality.

WP3. Applied research by adding the composites in a yogurt

The scientific objectives of this WP are:

Task 5. Obtaining yogurt with added proteins-carotenoidsand/or proteins-anthocyanins composites.
